Starbucks Gingerbread Loaf calls for "8 tablespoons(1/2 stick) butter". So which is it? 8 tablespoons(1 stick) or maybe it really means 1/2 stick,and it should be 4 tablespoons? (Seems to really be the 8 tablespoons). Baking time calls for 40-50 minutes; it took 60 minutes (my oven is reliable)Luckily, I'm a seasoned enough cook that I could reason these errors out. Speaking of seasoned... I also have The Soup Natzi's Mexican Chicken Chilli on cooking. The recipe doesn't include one ounce of seasoning. No salt, no pepper, no chilli powder. Nothing. I'll make something up,but it's guaranteed that it won't be a clone of the original. Oh, and I really bought this book for the Red Lobster cheese biscuit recipe. I've seen the version in this book many times. Much to my dissapointment, there's nothing new or different in this recipe. This book gets 2 stars instead of 1, because the loaf... For instance, the author recommends 1 teaspoon of cayenne pepper in the mushroom tomato topping for Applebees's spinach pizza. I LOVE spicy food, but this could kill someone. The orange glazed chicken has twice as much sugar in the glaze as needed. It is cloying. Most of you out there will adjust other things I am sure. My advice: go with care. They can't tell the difference. They use the cook book like a menu now. Its fun going through the book with the kids and searching for some of your favorite orders. Not only do they love the recipes but they want to learn to cook themselves. I always try to teach them a thing or two while I cook so that they know how to make more than cereal when there out on there own. This is the first cookbook that seems to grab and keep there attention. There are a bunch of great recipies, I recommend KFC chicken and the Red Lobster biscuits. My grandmother made home made spaetzle every Thanksgiving, and other times by making a flour/egg/water dough on an old water cutting board, and scraping off pieces 100+/minute into boiling water. It was amazing to watch. Simple, quick, and it kept her arms toned! Fast forward to today, my mom makes spaetzle using one of these Kull Spaetzle presses. It is even simpler now. Though you can get other brands for less, which is why I only give 4 stars, it's simple easy to clean, and the enameled versions can be dishwasher cleaned though mom just soaks it in the sink and scrubs it off. As an example, the Tea-Rubbed Salmon (using the Five Spice Chile Tea Rub) looks very enticing. The recipe for the rub calls for very large quantities of several spices, and yields six cups. The recipe states that the rub will keep for three weeks in the refrigerator. The salmon recipe calls for only one cup of this rub, and following the recipe exactly, I found that using this amount of rub completely overwhelmed the flavor of the salmon, rather than complementing it. The dish was barely edible. Just a sprinkle might have done the trick nicely! As it was, I was left with five cups of an incredibly intense spice rub, and there is no way on earth I'd want to use it six times in three weeks (before it expired)- this proved to be an enormous waste... The skill and inspiration behind the book is unmistakable. The more difficult issue is to what extent the method by which the recipes are presented make sense for your style of cooking. Ming begins each chapter with 32 `master recipes' followed by one or more uses for that master recipe. In this context, `master recipe' does not meat the same as the way the term is used by Julia Child in, for example `The Way to Cook'. In this case, the outcome of a master recipe is a complete dish on which one can make variations. In Ming Tsai's usage, a `master recipe' is the recipe for an ingredient which is not a dish in itself. This is certainly not a new idea as the examples of classic stocks and pastry doughs point out. Ming's contribution is to apply this principle systematically to a wide range of intermediate, storable ingredients for creating about 145 different... Ming Tsai, acclaimed chef and public television cooking show host, has made his sophisticated, highly flavorful style accessible to the home cook by organizing the cookbook around about 30 "master" recipes - flavor bases that are made ahead, stored in the refrigerator or freezer, and then later used in a complete recipe. The flavor bases may involve some prep work (not the least of which is finding the ingredients - you'll need to go to an Asian market) and extended cooking, but once you make one, you can then prepare several seemingly complicated dishes in surprisingly little time.
