    `Cooking at Home with The Culinary Institute of America' aims to arm the amateur cook with many of the tools of the professional and communicate the things which inspire a professional chef and set them apart from the amateur. The book comes to us with the authority of the foremost culinary school in the country and the aura of being a textbook with which it may seem to be sacrilege to take issue. This book does many very good things, but in popularizing it's subject, it does loose some depth and credibility.

    The book does several very good things that almost entirely outweigh its few blemishes.

    The first valuable lesson from this book is its characterization of the way students of professional cooking come to think about their vocation and its materials.     Lavishly and instructively illustrated, this teaching book presents, in words and pictures, step-by-step instructions for everything from making spice sachets and pureeing soups to carving a roasted chicken and filleting a fish. It even shows various ways of cutting vegetables, preparing garlic, cleaning leeks and mushrooms.

    A thorough primer, it starts with a discussion of tools, techniques and pantry ingredients, advocates an organized mindset, and proceeds in the same patient, simple manner through each course, discussing market choices and preparation, many illustrated. Easy-to-follow recipes build technique and repertoire, from Onion Soup Gratinee and Thai Hot and Sour Soup to Southern Fried Chicken, Roast Goose with Pan Gravy, Grilled Lamb with Mango Chutney and Beef Tenderloin with Mushrooms.

    I love the way this book has sections in the beginning of each chapter with such basics as boning a chicken or making rich pan gravy. I made the Beef Tenderloin with Wild Mushrooms twice and all I can say is WOW!! My family loved it and the leftovers were gone in a day. My next venture is Cream of Broccoli Soup which sounds really yummy. I highly recommend this book for anyone who wants to make great meals without having to search all over for strange ingredients. Your grocery store should have anything you need.

      This may be the best book published under the Weight Watchers' umbrella. It is a wonderful collection of favorite recipes from eight culinary genres. Chinese, Mexican, Indian, Thai, Italian, Greek, Japanese and Deli cuisine is featured. I love food (that's my problem) and delights such as General Tso's Chicken, Chicken Saltimbocca, Spanakopita, Shrimp Pad Thai and Moo Goo Gai Pan are now healthy, tasty and guiltless. You will not believe that these recipes are all 8 points or less. What is even more remarkable is that the family or guests will not suspect that these recipes came from Weight Watchers. This is a great leap forward for Weight Watchers as it makes the most popular restaurant meals not only available in your home, but healthy and delicious.

      I was just starting WW and it was going well, but I was bored. I had found a bunch of safe foods with just the right point values, but BOY was I craving take-out food and all those yummy things you can only get when cheating on a diet! I wanted Thai food most, which is notoriously filled with coconut cream and salt. Argh!

      When I found this book at Amazon, I immediately ordered it... and thank goodness I did! Not only does it have Thai, but Italian, Indian, Japanese, Mexican, Greek -- and more. There are foods in here that I never thought I'd be able to have while on Weight Watchers! The recipes are straightforward and actually authentic -- I was worried that they would be too far from the originals but have been pleasantly surprised. The Thai "fresh" spring rolls (also known as Vietnamese Goi Cuon) are SPOT ON! I've even served them to guests, who couldn't stop complimenting them.

      This is a great cookbook! I just bought it a few weeks ago and already I have made six recipes from it. This cookbook would appeal not only to those looking to lose weight but also aspiring cooks who are hooked on take-out. I would say that although these recipes are not exactly authentic versions of the take-out favorites, they are even better! I especially love the "clever cook's tips" that are featured on most of the recipes that tell you what substitutes to make in order to make the dish vegetarian or how to change a dish to make it better. The Spicy Orange Chicken so far is my favorite. Bon appetit!

        I'm a busy working mom and being able to prepare a nutrient-rich meal -- that my family will actually eat -- in under 30 minutes is fantastic. The turkey and white bean chili (page 196)is their favorite so far. My husband, my teenager and I, all watch our weight and this cookbook is fast becoming our favorite tool in helping us add whole grains, lean sources of protein, and more vegetables to our meal plans. The Pork Fajitas (page 210) and the Rosemary Pork Medallions with Chunky Applesauce (page 211) or the South Beach Macaroni and Cheese (page 249) are perfect comfort food for this cooler weather. I love Dr. Agatston's sensible approach to nutrition and his philosphy that if we're satiated and satisfied by nutrient dense, fiber rich foods, we'll lose weight and have healthier hearts and blood chemistry.

        I have every one of the South Beach Books. Phase 1 third day of the 2nd week is the hardest to get through. Your body has rid itself of those high glycemic foods, so you crave and want to eat some bread or other processed white flour food item.
        I have done every and I mean every diet out there (Atkins, Weight Watchers,Soup diet,Slim for Life, Slim Fast, American Heart Assoc. I also took Redux to lose weight which has caused me some heart trouble. Everytime any of the above was done I would loose then fall off the diet and gain what I lost plus an additional 20+ lbs. This was the only one which made since for me and has allowed me to have that cookie, french fry, or brownie once in a while and still keep on the diet.

        I enjoy this cookbook more as it is simple. The first cookbook was too in depth. More for chefs to cook with vs a working person. I hate having to be in the kitchen cooking for hours even when I was not dieting. Very simple recipes that allow short prep... Read more

        Definitely get this cookbook if you're following/thinking about following the South Beach Diet, or even if you just want to eat healthier.

        All recipes (except a few) take 30 minutes or less to both prepare and cook (shortcuts are also listed in lots of recipes, as in "you can use a frozen bag of broccoli here to save time"), and there are literally dozens of them that sound delicious to my boyfriend even, a hamburger and fries kind of guy. Nothing is too gourmet to be a good weeknight meal.

        Remember the "Stocking the South Beach Diet Kitchen" guide in the regular cookbook? It's much expanded here, with a short paragraph for each item, telling you what to look for at the store, what the item is good for, etc. Very helpful!

        There's also pages of meal and snack ideas that don't require a recipe. These are really simple ideas or tips for throwing together something quick. For instance, "take a whole wheat tortilla, slather spaghetti sauce and cheese on... Read more
